The Ultimate Coconut Porridge

When it comes to breakfast, nothing beats a big bowl of warming porridge to get me out of bed in the morning. As the skies get darker and the weather gets colder, it’s becoming far more difficult to wake up and go about my day with the same energy as I had in the summer. Thankfully, this new porridge recipe gives just the boost needed to be fierce in everything you do. Just like a standard bowl of oats, it’s packed with fibre to keep you full and energised all morning, and is made gorgeously creamy thanks to the banana, coconut milk and coconut oil. But, the ingredient I’m most excited about is the coconut water. I’d never even considered using coconut water in my porridge before but it was by far one of the most delicious decisions I’ve made! It brings a subtle and refreshing sweetness to the oats and loads it up with some amazing nutrients to leave you feeling really spectacular.
Coconut water is a fantastically nutritious drink. It’s loaded up with electrolytes which help replenish your body, making it a great addition to your diet if you suffer from dehydration or have just endured a tough and sweat-inducing workout. Its composition also includes some essential minerals such as calcium, iron, manganese, magnesium and zinc and is a rich source of B-complex vitamins. Some research even suggests that coconut water has significant anti-aging effects and is great for skin health too. With all of that, you don’t need to tell me to drink more coconut water twice!

Ingredients
Serves 1

  • 1/3 cup oats
  • 1 cup coconut water
  • 1/4 cup coconut milk
  • 1 ripe banana
  • 1 tablespoon coconut oil

Method

Simply place your oats, coconut water, milk and sliced banana in a saucepan and heat on low-medium temperature until the oats have dissolved all of the liquid, stirring frequently to avoid burning and allow the banana to mash and mix with the oats. Once the liquid has been dissolved, stir in your coconut oil, serve with your favourite toppings and enjoy.
